Who we are
Birch & Co is a small craft distilling company, rooted in the the Rebellious Spirit of the great George Birch. An inventor & pioneer of modern ideas, Birch lived in tireless pursuit of excellence. His spirit runs in our veins, as we work tirelessly to hand-craft the finest of Whiskeys on the Island of Ireland.

Rooted in the admirable values of George Birch, we are an independent whiskey company, building forwards to create exceptional Irish Whiskey of the highest quality, with a strong emphasis on innovation and sustainability at our core. Our collection is hand-crafted with patience & passion.

Whiskey is one the richest bounties of our Planet Earth - born of her clearest spring waters, plumpest barley, patiently grown under her the warmth of her sunshine and nourished by her rainfall. Distilled in pots which are hammered from copper, mined from from the earth, and heated with energy generated by the forces of nature. Matured in wood, which has spent years feeding from her lands.
At Birch & Co, we believe that the only way to make great whiskey is in collaboration with our Earth.
With this in mind we make every effort to reduce our waste, for example by donating our spent grain to local farmers to feed their animals, planting one willow tree for every case of whiskey sold, using only sustainably sourced materials, and by using Carbon Removal & Storage to offset our remaining carbon footprint.
